Красный борщ без мяса

Такой рецепт очень кстати на второй день после праздничного торжества, так как красный борщ – это настоящее здоровье.

Необходимые продукты для приготовления борща:

  • 1 штука – свёкла;
  • 1 штука – сладкий перец;
  • 2 штуки – морковь;
  • 3 штуки – картофель;
  • 2 штуки – репчатый лук;
  • 2 столовые ложки – томатная паста;
  • 4 столовые ложки – растительное масло;
  •  0,3 кочана – белокочанной капусты;
  • 2 штуки – лист лавровый;
  • 3 литра – воды;
  • 1 пучок – зелени;
  • соль и перец по вкусу.

Рецепт приготовления

  • Ставим на огонь кастрюлю с водой и доводим её до кипения. Пока вода не закипит, моем, очищаем и нарезаем тонко свёклу.
  • Чистим лук и морковь и хорошо их моем. 1 морковь нарезаем тонкой соломкой, а лук – кубиками.
  • Вторую морковь натираем на крупной тёрке.
  • Очищаем, тщательно моем картофель и нарезаем его кубиками.
  • В кастрюлю с кипящей водой высыпаем свёклу, и пусть она кипит 10 минут. Затем выкладываем морковь, нарезанную соломкой, половину лука и картофель и оставляем все, чтобы варилось 15 минут.
  • Нарезаем соломкой капусту.
  • Вымытый сладкий перец режем на дольки и убираем из него семена. Нарезаем его соломкой.
  • Затем моем зелень и мелко её режем.
  • Наливаем растительное масло на разогретую сковороду. Сюда же кладём вторую половину лука и моркови. Весь этот состав тушим около 4 минут, не забывая помешивать.
  • Добавляем томатную пасту и тушим ещё 3 минуты на среднем огне.

Выкладываем в кастрюлю сладкий перец, капусту и зажарку, солим и перчим по вкусу. Сюда же добавляем лавровый лист и продолжаем варить борщ без мяса ещё 10 минут на среднем огне. Добавляем нарезанную зелень и варим ещё 1 минуту. Выключаем огонь и даём борщу настояться 20-30 минут.

Красный борщ готов, приятного аппетита.
