Постные вареники с курагой и миндалём являются изысканным блюдом. Начинка содержит полезные микроорганизмы и богата витаминами. Такое блюдо отлично подойдёт как для праздничного стола, так и в обычные дни.

Вареники с такой начинкой готовятся из заварного постного теста на воде и растительном масле. Все, что необходимо для теста:

  • мука – 4 стакана;
  • подсолнечное масло – 1 столовая ложка;
  • вода – 1 стакан;
  • соль – 1 чайная ложка.

Начинка:

  • миндаль – 300 грамм;
  • курага – 15 штук;
  • натуральный мёд – 2 столовые ложки;
  • сок лимона – 2 столовые ложки.

Для подачи на стол:

  • оливковое масло – 2 столовые ложки;
  • миндальные лепестки;
  • натуральный мёд – 2 столовые ложки.

Приготовление:

  1. Половину просеянной муки высыпьте в глубокую миску. В муке сделайте выемку и в неё добавьте соль, которую нужно растворить в 1 столовой ложке воды.
  2. Сюда же влейте кипяток и аккуратно размешайте ложкой, не переставая тщательно перемешивать, добавьте масло растительное.
  3. В получившуюся массу высыпаем оставшуюся половину муки и сразу замешиваем тесто, которое должно быть мягким и эластичным.
  4. Миску с тестом накрываем полотенцем и даём ему отдохнуть в течение 15 минут.
  5. Миндаль нужно натереть на крупной тёрке. Блендер не рекомендуется применять, так как произойдёт большая потеря миндального масла.
  6. К миндалю добавьте мёд с соком лимона, аккуратно перемешайте и поставьте в холодильник.
  7. Примерно на 4 минуты замочите курагу в кипятке, слейте воду, затем измельчите её при помощи блендера. Перед началом приготовления вареников соедините курагу с миндальной пастой и хорошо перемешайте.
  8. Достаньте из холодильника отдохнувшее тесто, тщательно его вымесите. Разрежьте его на кусочки и раскатайте их как можно тоньше.
  9. В центр лепёшки положите начинку и залепите края вареника.
  10. Вареники должны вариться в подсоленной воде, когда они начнут подниматься вверх их нужно варить ещё пять минут на среднем огне.
  11. Перед подачей на стол вареники с миндалём и курагой полейте оливковым маслом, смешанным с мёдом, и украсьте этот блюдо миндальными лепестками.
